The Switch versions is streamed via the Cloud, it isn’t native to the system. I would imagine that means that they’re playing the PC version, so bugs/fixes specific to that system would be relevant. Hopefully someone can confirm this, or provide alternate information if it isn’t correct.

That toggle is the only reason I’ll probably give this a shot through Game Pass. Majora’s Mask is an excellent example of a great game I hate playing, and that’s all down to the fact that the time limit is anxiety-inducing and I don’t have any fun playing it.

I don’t think ‘terrible’ is really justified, largely because they’re mostly just so short that it’s hard to have a real quality guage. They’re mostly just really short summaries that give a brief overview of where they’re from, some basic motivations, and potential conflicts with other champions. I suppose you could say they’re terrible in the sense they don’t really develop the character or story in any significant way, though. It’s a big part of why the show works, since there’s really no significant amount of lore to get in the way.

It’s possible, and I wouldn’t mind it going that way, but don’t forget that Asari live for around 1,000 years, and she was only around 100 or so. Liara is available to be used long after Shephard would be gone even if they survived. The same would go for the Krogan, so you could have Wrex and/or Grunt around as well.
It would be more telling if we saw Garrus or Tali. Turians and Quarians have lifespans equivalent to the extended spans of humans (approximately 150 years).
